Quinoa, the gym and sciatica….

Good morning! Well….I have two new knees (knew knees lol). I had the right one replaced on 1/5/18 and the left one replaced 3/2/18. I also had to move, a month post op, on 3/31/18 (thank God I had lots of help!) I’m living in a town that I lived in for years when I first moved from California to Washington State almost 14 years ago.

I am finally ready to get back into the pool at the gym and focus on my weight loss/fitness goals again. To make these knees last and recover from the sciatica I’ve had for several months, I need to get about 80lbs off and get lean and strong. So this is the time…it has never been so critical for me to REALLY work at getting the weight off and getting healthy.  So I rejoined Weight Watchers (highly recommended…in my opinion the best weight loss program out there because its livable) and am going to my old gym, the one I used to go to about five years ago, to sign up and see about starting Aqua Fit classes.

But first, I’m going to make Breakfast Quinoa. I used to make it often, a few years ago but today I’m trying a new recipe. Its from Epicurious. Here’s the link….

Update on my health!

In the main post I mentioned I have severe arthritis in both my knees. On January 5, 2018 I had a total knee replacement of the right knee, and will have the left one replaced on March 2, 2018…three short weeks away. The recovery has been hellacious but I know it will be worth it. I’m going through recipes again now that the fog of pain medication has lifted…more posts to come!


Greek Salad!!

Today I had some running around to do so I had a quick breakfast and had no time for pics or a post. It was just a P B & J on gluten free bread, anyway. I snacked during the day then had this beautiful salad for dinner. The protein comes from chickpeas, black beans and feta cheese. When I get home from my 12 step recovery meeting I will have some nonfat yogurt with gluten free yogurt if Im hungry.

All in all a good day.


Day one of a healthier lifestyle…

I am on day 3 of recuperating from knee surgery. I will be having another one in a month or so, which will be more significant. Its imperative that I get this weight off and get healthy so that the second part of my life is more enjoyable than the first. I am focusing on gluten free, which is important because of some pesky autoimmune issues I have going on. I am also focusing on lowering my fat intake, and staying away from frozen and canned foods.

Yesterday morning I had lowfat yogurt and gluten free granola for brunch (I woke up late) 

For dinner we had angus blue cheese burgers, roasted red potatoes with a bit of scallion oil and tarragon (ate the bun despite my gluten free goal. It was a ciabatta roll…what was I supposed to do?!) 

I am planning my meals for today…post coming soon.

This is the cheese sauce for the broccoli soup. Its amazing. Potatoes, carrots, nutritional yeast, lemon juice, white wine vinegar…who’d think it would taste good enough to dip chips in???

Cooking for the day is done….

I took pictures of most of what I made but I left my phone downstairs, and my legs hurt so I’m taking a break in my room. I’ll post them later.

I’m acutely aware of the irony (sagleo is that the right word?) (sagleo is my amazing sister who is a court reporter…so she took tons of grammar classes!!!) that in order to eat healthy and be prepared all week with healthy choices so that I get some weight off and my legs stop hurting….I stand in the kitchen all day Sundays cooking which causes the pain I’m trying to eliminate by eating healthy which necessitates standing in the kitchen all day on Sunday…and round and round we go!


A rant, some info and this week’s menu….


Hi! My name is Michelle and I live, work and play in the greater Seattle area of the beautiful state of Washington. I love the Pacific Northwest!

Like most of us in our (gulp) 50’s, I am trying to atone for my lifetime of sin…cookies, couch potato shenanigans, buffets and the firm policy to avoid running unless someone was chasing me with a hatchet. And, like most of us in recovery, I spent a lot of my time in general neglect and abuse of my body, mind and spirit….self medication with substances and  Angry? Drink. Sad? Use drugs. Happy? Drink AND use drugs. My weight and cholesterol are up, my energy is down, my knees are arthritic. Now all I need is to begin to pee a little when I sneeze. I’m in pain all the time which, I can tell you, is No Fun At All. In Caps. Yep, I went there.

Now clean and recovering, I am making lifestyle changes. I know, I know, I’ve said that before.  This time instead of trying to change everything at once, which never ends well, I am taking baby steps. Baby steps toward the goal I’ve had for years…living a vegan lifestyle. I’ve already eliminated meat from my diet. It wasn’t that hard. I don’t like it much and I have ISSUES with the commercial meat industry and how they treat animals, forcing them to live a life of misery then ending their lives in a brutal manner so they can be sliced up and plopped on our dinner plates. The day I realized that when meat “spoils”, what is actually happening is that it is DECOMPOSING (think roadkill) was the day I longed to change my life so I no longer consume animal products. If you want to be a carnivore for life, NEVER listen to Howard Jones’ song “Assault and Battery” or watch a PETA video. But I could never get there. Now that I’m clean, I have a chance. I have choices.

OK, OK, that’s the last rant that you’ll hear from me.

So that was my first achievement. I’m still consuming some dairy. I loves me some moo-cows…such docile and sweet animals. But baby steps, baby steps. I make my own almond and coconut milk but have yet to find a good substitute for half and half in my coffee. Once I achieve my goal of getting off caffeine that will resolve itself.

I just realized I lied. I am gluten intolerant so my actual first achievement was to eliminate wheat products. That’s not part of veganism but for me its necessary. I have three autoimmune diseases and am in remission from a fourth…what I can I say: I’m an overachiever. Cuz, ya know, why have just one when you can have FOUR. (true addict thinking) Once my stomach issues and autoimmune diseases calmed down, I was hooked.  Finally, a solution.

OH! Before I continue…since I’m not eating meat or wheat products…no bread, no pasta, limited sugar, limited dairy products…you might ask “what the heck DO you eat then?” The answer is….LOTS!!!!!! Nuts, seeds, coconut yogurt, beans, rice, sweet potatoes, veggies, fruit, curry curry and more curry…and the best part is that I can eat less food (speaking of volume) than when I was eating the Standard American Diet and NOT BE HUNGRY. Its amazing.

I have been spending Saturdays doing housework and laundry, etc and Sundays cooking ahead for the week. So….with that….here is my menu for this week:

Apple coconut curry, from I love curry. Its comfort food. This is one of my favorite recipes so far. I made it late last night and neglected to take a picture of the finished dish. I’ll add one later.

Sweet Potato and Black Bean Chili, from You wont miss the meat. Same as the Apple Coconut Curry…picture to come later.

Today I’m making:

Mushroom and Leek Risotto from I can’t wait. Nom.

Vegan Broccoli and Cheese Soup from OMG I made this last week. Its seriously delicious. I am going to make a second batch of the “cheese” to eat with gluten free tortilla chips…yes its THAT good. Its kind of spooky how good it is.

Me CroppedAfter years of “eating my feelings”, buffets and general couch potato shenanigans, my knees became severely arthritic. I just had one knee surgery and will be having the other knee replaced soon. This has been my “whoa there” moment. At 50 I am making a commitment to get healthy. After years of neglect, I may never have the body that looks the way I want it to, but I hope to gain the body that feels and works the way I want it to!

I’m using the Weight Watchers food plan to get some weight off and once I’m able to be active I’ll be incorporating activity into my life. I want to hike, bike, swim and walk walk walk one day. I know I need to take baby steps (pun intended) so let the those steps begin!

I am also a recovering addict and I see in myself the same addictive behavior around food that I have around drugs and alcohol. It’s all about self medication, whether its food or substances. You know that saying that knowledge is power? I’m working on putting it all together to build a healthier me so that the last half of my life is more enjoyable than the first half.
